INGREDIENTS

Curd:

  • 2 Lemons, zested and juiced
  • 1 1/2 cup Flour
  • 3 Eggs
  • 1/2 cup Sugar
  • Vanilla Extract
Shortbread:

  • 100g Sugar (2/3 cup)
  • 200g room temperature Butter (3/4 cup + 1 tbsp)
  • 300g Flour (1 1/4 cups)
  • 1/2 tbsp Miso paste
  • Vanilla Extract

INSTRUCTIONS

  1. Preheat your oven to 375° F.
  2. Zest and juice your lemons and add to a bowl with your eggs, sugar, vanilla, and (sifted) flour.
  3. Mix and set aside. In a stand mixer mix your butter, sugar, flour, vanilla, and miso paste until it is well combined.
  4. Spray an 8×8″ pan and add your dough and let it chill for 15-20 minutes.
  5. Once chilled add in the lemon curd.
  6. Bake lemon bars for 20-25 minutes, you’ll know it’s done when you can still jiggle the lemon curd but it’s almost set.
  7. Crack open a bottle of Lot 738 Prosecco or any other Prosecco and enjoy pairing it with your lemon bars.
